Meet the family that changed the way some Americans eat Mexican food: "Tortillas are the centerpiece of the table" - CBS News

South of Downtown Austin, nudged in between warehouses and hipster clothing stores, sits Siete Foods — one of the fastest-growing food and beverage companies in the nation.

The multi-million dollar company is behind some of the most innovative, grain-free products on the market.

Co-founder and CEO Miguel Garza said the inspiration behind Siete came after he noticed a lack of Mexican-American representation in stores.

"We didn't see a brand that was speaking to us being a Mexican-American family, doing what Chobani did in yogurt or what Oatly's doing in alternative milk. We really do feel this great responsibility to share the beauty of the culture that we grew up living," Miguel told CBS News' Mireya Villarreal.

The brand was also born out of necessity after co-founder and president — and Miguel's big sister — Veronica Garza started to have health struggles.

"I deal with multiple autoimmune issues. One of those conditions is lupus. My older brother, Bob, had suggested a different type of diet that could possibly alleviate a lot of the symptoms and inflammation," Veronica said. "My whole family started eating this new way with me. We were basically following a paleo diet and eliminating grains. At that point, we were no longer able to eat a lot of the foods that we had grown up eating and loving."

"Like what?" Villarreal asked.

"Like tortillas," Veronica responded.

Healthwise, the family felt better, but cutting out gluten made them feel like they also lost something much bigger.

"Tortillas are the centerpiece of the table. You go to any restaurant and it's chips and salsa, guacamole. These foods that add to the beautiful Mexican culture, they weren't on the menu for us anymore," Miguel said.

"We sorta felt like we're sort of, like, turning our backs on our culture, not being able to participate in this important part," Veronica added.

"And then it was around that time that we're at a carne asada and my sister shows up with almond flour tortillas," Miguel recalled.

Veronica quietly began experimenting with new ingredients and found customers for her product near the family home in Laredo, Texas.

"I had a full-time teaching job and on weekends my mom would get in the kitchen with me, and we would just hand press, like, a ton of tortillas," Veronica laughed. The family would leave their daily jobs and head straight to the kitchen.

The word siete means seven in Spanish and represents the seven members of the Garza family who started this business more than a decade ago. The family would leave their daily jobs and head straight to the kitchen.

"I started to realize like, 'Oh man, you know, this product could actually be sold in stores. And if people are buying it on the weekends from you they might buy it at a couple of like natural food stores,'" Miguel said.

Today the company offers over 40 gluten-free products selling in more than 15,000 stores nationwide

"I'm really, really proud. It's hard for me to even talk about it 'cause I cry all the time. When I see our tortillas in stores, it still makes me cry," Miguel and Veronica's mother said.

For the Garza family business, the payoff is discovering the impact they have on families like theirs.

"This 'You've changed my life with this tortilla,' and I'm like, 'Really? Like, with a tortilla? You're exaggerating,' and but then you would hear it over and over and over again. Be like, okay, maybe this ... sorry, I'm getting a little emotional but ... yeah, maybe this is possible," Veronica said.

"It feels good to know that, you know, we can do something that's affecting people's lives in a positive way and you know that we're doing it as a family," Miguel said.

Eating at This Time of Day Lowers Your Risk of Type 2 Diabetes, Study Says - Eat This, Not That

If you're a late riser or you regularly eat your first meal of the day in the late morning (or skip it altogether), you may want to reconsider your breakfast-eating habits. A new study suggests that eating breakfast on the early side may reduce your risk for developing type 2 diabetes and other disorders of metabolism. The practice could even help you avoid a related diabetes risk factor: being overweight.

Study results show that people who eat earlier breakfasts have lower blood sugar and less insulin resistance

The study presented recently at the Endocrine Society's annual meeting analyzed dietary data and fasting glucose and insulin from a nationally representative survey and tests of 10,575 adults.

The researchers from Northwestern University and the University of Illinois, Chicago, found that people who ate breakfast earlier than 8:30 a.m. had lower blood sugar levels and less insulin resistance than people who ate their first meal later in the day.

Elevated blood glucose and resistance to the hormone insulin, which helps regulate blood sugar, are two markers of prediabetes and type 2 diabetes. (Related: Warning Signs You May be Developing Diabetes.)

The Centers for Disease Control and Prevention estimates that 34 million Americans have type 2 diabetes and 88 million have prediabetes. Of the latter, 84% don't know they have the syndrome that puts you at increased risk of developing type 2 diabetes, heart disease, and stroke.

Meal timing, not duration, is key

Other studies have suggested that a popular dieting strategy called time-restricted eating, which allows a person to eat as much as they want but during a shorter "eating window" or duration, improves metabolic health. This study, however, found that insulin resistance actually increased with shorter eating intervals while blood glucose numbers didn't swing significantly no matter the length of the eating window.

In other words, you may be better off taking your time eating your meals rather than trying to cram them all into a short timeframe. And certainly, eat early! The study found that eating the first meal after 8:30 a.m. was associated with both high blood sugar and greater insulin resistance.

One cup of cubed butternut squash has about 3 grams of satiating fiber and only 63 calories with less than 1 gram of fat. That makes it a phenomenal weight-loss food.

More specifically, butternut squash offers some soluble fiber, which has been found to reduce appetite and calorie intake. One 2009 study in The Journal of Nutrition discovered that for every gram increase in total dietary fiber in women's diets, their weight decreased by 0.55 pounds. Another 2018 study in Eating Behaviors revealed that women who consumed more fiber lost more weight than those with a lower fiber intake.

Orange vegetables and fruits, including butternut squash, are naturally high in beta-carotene—a provitamin that your body then converts into vitamin A. On top of that, a one-cup serving of cubed butternut squash provides a whopping 745 micrograms of vitamin A—that's 83% of the recommended dietary allowance (RDA) for men and 106% of the RDA for women.

Vitamin A plays a critical role in eye health—it's essential for nourishing certain parts of the eye to prevent dryness, protecting the cornea, and supporting vision under poor lighting conditions (like while driving at night time).

Keep in mind that vitamin A is fat-soluble, which means that in order to best reap the benefits of this eye-enhancing nutrient, you'll want to eat butternut squash with a fat source. For example, try roasting it in olive oil, or tossing it in a salad with almonds or pecans.

Butternut squash is high in magnesium, manganese, and potassium—three minerals that contribute to bone health in a big way.

While magnesium promotes higher bone mineral density and potassium reduces calcium loss in bones, manganese helps support the process of building bone tissue. That means that butternut squash can help strengthen and protect your bones, thereby reducing your risk of developing osteoporosis.

Antioxidants can protect your cells from free radical damage while also reducing inflammation, thus warding off certain types of cancer and other chronic diseases. And fortunately, butternut squash is chock-full of them—specifically, vitamins A and C and beta-carotene.

A 2020 study in Food Science & Nutrition found that beta-carotene promotes communication between cells, which can stop the growth of cancer cells. Other research has linked beta-carotene intake to a lower risk of lung cancer and of death from cancer.

Fun fact: Butternut squash has more potassium than a banana. Why is this noteworthy? Because potassium can help to keep your blood pressure in check. It does this by relaxing blood vessel walls, as well as by eliminating excess sodium in your body.

In fact, a number of studies have linked low potassium intake and increased blood pressure. A 2020 review in the Journal of the American Heart Association found that there was an association between potassium supplementation and lower blood pressure in adults with hypertension.

Butternut squash is bursting with carotenoids like beta-carotene, lutein, and zeaxanthin that contribute to heart health. That explains why a 2016 study in Scientific Reports found that when people added a daily serving of yellow-orange vegetables to their diets, their risk for heart disease dropped 23%.

Speaking of carotenoids, these plant pigments can also help to protect your brain. According to a 2014 study in the British Journal of Nutrition, a carotenoid-rich diet was associated with enhanced memory recall, verbal fluency, and visual attention in aging adults.

Most evenings, including Thursdays, kids eat free at four Atlanta area HOBNOB locations.

Cafe Brazil

For most of the week, including Thursdays, kids eat free at Cafe Brazil locations in Texas.

Community Tavern

  • When: Every Tuesday through Thursday.
  • Age limitations: Kids age 12 and under.
  • Number of free kids’ meals per adult entrée purchase: One. Each adult must spend $16+.

Community Tavern is one of the few restaurants that lets you use this offer on carryout orders as well as dine-in orders.

There are plenty of restaurants that offer kids eat free days every day of the week, though, including Fridays and Saturdays! Here are nine restaurants where kids eat free every day.

Bruster’s Ice Cream

If you have younger kids, it’s good to know that Bruster’s Ice Cream will give them free baby cones all the time — as long as they meet certain height requirements.

  • When: Everyday.
  • Age limitations: No age limitations, but your child must be under 40” tall.

Fricker’s

At Fricker’s, kids eat free all day everyday. In order to qualify for this offer, you will have to purchase a kids’ drink in addition to an adult meal. There are a number of outlets in Ohio plus one each in Indiana and Michigan.

  • When: Everyday.
  • Age limitations: Kids age 10 and under.
  • Number of kids’ meals free with an adult meal purchase: 1

This offer applies to dine-in customers only.

Holiday Inn

If you’re staying at a Holiday Inn, not only do your kids get free meals, but they’ll be able to stay at the hotel for free, too.

There are different stipulations for the Kids Eat Free program depending on which region you’re visiting. While most Holiday Inns are participating locations, there may be few that aren’t. Call your location ahead of time to check before balancing your vacation budget on free kids meals.

North, South & Central America

In the Americas and all countries, you can get two free kids’ meals per adult entree. In the Americas and most other countries, you may also be capped at four free kids’ meals per family.

  • Age limitations: Kids age 11 or under.
  • Number of kids meals free with purchase of one adult entree: 2 to 4

Europe is the only market where you can potentially get free kids meals through room service.

  • Age limitations: Kids 12 and under.
  • Number of free kids’ meals per one adult entrée: 2 to 4

Asia Pacific, Middle East & Africa

  • Age limitations: Kids 12 and under.
  • Number of free kids’ meals per adult entree: 2 to 4

If you are staying in China, there will be only one on-site restaurant that offers the kids eat free promotion. Check with the front desk to learn which one is the qualifying, all-day dining option.

  • Age limitations: Kids age 12 and under.
  • Number of free kids’ meals per adult entree: 2

Tony Roma’s

Kids eat free everyday at Tony Roma’s. And with more than locations on five continents, that’s a good deal.

  • When: Everyday.
  • Age limitations: Kids age 12 and under.

99 Restaurants

To qualify for 99 Restaurants’ kids eat free day, you’ll need to be a member of the 99 Rewards program. This promotion is good any day of the week — as long as the Redsox won a game the day before. There are dozens of locations in New England and the Northeast.

  • When: The day after a Red Sox win — any day of the week. 
  • Age limitations: Kids age 10 and under.
  • Number of free kids’ meals per one adult entrée purchase: 1

Texas de Brazil

Depending on how old your child is, they can dine at Texas de Brazil for free everyday. Regardless of age, you won’t ever pay full price.

  • Under 3 years old: Free everyday.
  • Ages 3 – 5: $5
  • Ages 6 – 12: Half of adult pricing.

Fogo de Chao

Kids eat for free or at a reduced price everyday at Fogo de Chao, too.

  • Age 6 and under: Free all the time.
  • Age 7 – 12: Half of adult pricing. 

JJ’s Grill

Kids eat free all day everyday at JJ’s Grill, with locations spread across Arkansas.

  • When: All day. Everyday.
  • Age limitations: Kids 12 and under.

Hutch American Bistro

  • When: Everynight from 5 to 6:30 pm.
  • Age limitations: Kids age 12 and under.
