ANN ARBOR, MI -- For Swaroop Bhojani, running Hutkay Fusion is part good food, part chance to educate.
The Ann Arbor eatery serves Indian-inspired cuisine with a focus on health and wellness.
The menu is 90 percent vegan, Bhojani said, and features a variety of heirloom vegetables and sprouted grains. Hutkay’s 11 types of sauces are also free of added sugar, preservatives, colors or creams.
One of Hutkay’s most popular dishes is the beet burger, featuring a beet and coconut patty, which Bhojani said is “something to die for.”
Other popular dishes include the Shanu Bowl, featuring sprouted chickpeas, roasted plantain chips and colechasia rolls, and the Samosa Bowl, which has sprouted chickpeas, vegetables, microgreens and a tamarind date mint sauce. Hutkay Fusion also serves grain bowls, wraps, soups and salads.
Bhojani has a main principle when it comes to his dishes: “food is medicine.”
In addition to serving heirloom vegetables, dishes also feature a variety of sprouted grains, including wraps made from organic sprouted wheat.
“(It’s) more digestible because it comes out of a live grain,” he said.
Bhojani, who formerly worked in radiation oncology at the University of Michigan, has also hosted classes teaching cancer patients how to eat to fight cancer.
Hutkay Fusion is more than a restaurant, Bhojani said.
“There are many customers who come in daily,” he said. “It’s like a community here.”
Hutkay Fusion, 3022 Packard St. in Ann Arbor, is open from 11 a.m. to 2:30 p.m. and 5 to 8 p.m. Tuesday through Thursday and 11 a.m. to 3 p.m. and 5 to 9 p.m. Friday and Saturday. For more information, visit the Facebook page. Call 734-786-8312.
